Leftovers!

Thank God for leftovers! Tonight, I don't have to cook. Instead, we are cleaning out the refrigerator.

There's Chili, Minestrone Soup, Country Rigatoni, and Broiled Shrimp that were marinated in olive oil, lemon juice and oregano. We have Green Salad, Waldorf Salad, Coleslaw, Salsa and Guacamole. There are Cheesy Scalloped Potatoes, Asiago bread, Pumpkin Pecan Dessert Squares and an incredible Chocolate Layer Cake.

We're a little short on veggies tonight, but I'm willing to eat an extra apple just so that I don't have to cook.

Tomorrow, we have family to dinner.....Pork Chops and Rice, Green Beans, Broccoli with Cheese Sauce, and salad.

I know, it sounds like my mind is on food again, but actually, it's focused on the freedom to get other things done, rather than cooking. Everyone needs a day off now and then!

With all of those leftovers, you should be inviting the neighbors in. Sounds wonderful! BTW: I bought some asiago cheese spread the other day. It's a familiar taste, so I know that I've had it in some manner, before. I just didn't know what it was. It is good!

Good grief, sounds as if you have a lot to eat. And you will have the pleasure of making room in the fridge as you take the things out, which I always find a satisfying thing to do as i clear things out of it.

Buffy:

Cop Car, I'm trying to learn to cook smaller meals. It doesn't help that we rarely know in advance if our son will be at the table, and we end up shopping to satisfy three generations of appetites. I often comment that we could feed the neighborhood.

Adele, we have TOO MUCH to eat. It makes it more difficult to diet, and I detest the waste. You're right that it's satisfying to clear out the fridge.

Cop Car:

I only get the satisfaction of clearing out the frig when Hunky Husband is out of town. The longer he is gone, the barer the frig/freezer shelves become as I eat up the leftovers. (When I lived alone, my frig was lucky to have a hunk of cheese in it and my freezer to have ice cubes.) I did, however, clean out my spice cabinets over the weekend. I threw out more than 50 containers of spices/seasonings--and feel all the better for it. Many were spices that my mother had (she's been gone for over 10 years) and several were from when I lived in Florida (1981 & 1982) or Albuquerque (1983-1990), so you know I was a bit behind in pitching them. Since retiring I'm much better at throwing stuff away.
I just took a carload of perfectly good work clothes, that fit me, to the YWCA's women's crisis center people Tuesday! My closets are still packed. I've set aside a bunch of summer clothes to take them next spring (I just didn't get all of the summer clothes to them in time this year.)

I SO envy you that organized mind!

The spices should have been thrown away years ago. They have a shelf life, even if it isn't marked on the bottle. I'd say that spices that were more than a couple of years old were already past their prime.

As for the clothes, we have pickup service here for the Cancer Fund, Amvets, Purple Heart and several others. The problem is trying to remember who you gave it to the last time, so that they all get a share of the goodies.

Sure beats the left overs I had tonight! You made me hungery!

I'm addicted to food. I've learned at my Mother's knee. She's addicted to jam, bread, butter and lobster. *S*

When you see that my post is about food....just stop reading! *G*
