Unfortunately, EVERYONE in my household would be "ooot" in no time.
It's no secret that I enjoy cooking. And, you all know that we are embracing the diabetic diet in this house. To that end, we are cutting carbs and fats and trying to increase the fiber. Unfortunately, our bodies are having a field day with the extra fiber. I'm happy to say that my mother has us all whipped into shape, and no one is allowed to entertain following dinner.
I happen to have a recipe that purports to be the Pasta e Fagioli soup served at Olive Garden. I talked with the dietician about the recipe, and was pleased to discover that if you have more than five grams of fiber you can deduct it from the carbs in the pasta, so this is a soup that will stay on our menu.
We get a magazine called "Cook's Illustrated." If you enjoy cooking, this magazine is jam-packed with tips, techniques, buying guides and recipes. The only drawback is their on-line advertising. Don't give them your e-mail address if you order the magazine! At any rate, tomorrow I plan to try their lentil soup recipe. In the same issue, January & February 2004, they had a great recipe for Eggplant Parmesan Light that we'll be having later this week. They are adding interesting things to our menus. Check them out.
Of course, one of the ways we are adding fiber to our diet (and music to the air) is to add beans and other legumes. I'd like to recommend a book called "The Brilliant Bean," by Sally and Martin Stone. The subtitle for this book is "Sophisticated Recipes for the World's Healthiest Food." If you are interested in eating healthier meals, see if you can get a copy of this book. The opening chapter on bean basics is a must read.
Later this week I hope to make Cheesy Cauliflower Soup. We've been adding a lot of cole crop veggies to our diet. This recipe comes from the Diabetic Gourmet on-line. One of the best aspects of this recipe is that it is quick to fix, with ingredients that you are likely to have on hand.
If you're looking to eat healtier, I hope some of these ideas helped. We'll just have to find a way to deal with the "One toot and yer ooot" rule.

My mother believes that a well mannered person doesn't have body functions, or at least, none that ever surface in public.
So....we have a choice now. We can be healthy and crude, or we can be well mannered and die early.
Ahhhhhh...what a JOY life can be!

Hey Buf.
Now I can't believe you are going to make everyone suffer by feeding them Lentils, Cheesey Cauliflowers and vegetables with extra fibre and not expect the odd trouser chortle.
I expect the incidence of 'going for a walk in the garden' to increase after the meals in future.

Gawd...I'll have to make sure that DH doesn't see your pet name for the above mentioned body function!
