It seems that my household is going to be embracing the diabetic diet. I'm starting to do some research on the guidelines, but I have a favor to ask. If you have a good low-fat way to prepare vegetables, would you please share it with me? I'd like to be able to offer variety in our diet and not go overboard on the fat.

What my mama has been doing with daddy is using their steamer ~ daddy seems to love it and it is also very good for him on his diabetic diet

Last summer I froze fresh dill in pickling salt. I found that this way it keeps a really intense 'fresh dill' flavor. Then I too use a steamer to steam all kinds of vegetable variations - parsnips with peas, carrots with brussel sprouts, carrots with diced turnip and peas, etc. The dill makes the veggies taste like they were just picked. I toss on a generous sprinkle of dill before I steam them. The large crystal salt isn't good but it can be separated from the dill to my satisfaction. Hub is diabetic and he loves these veggies - even minus butter which is totally amazing.

Jamie, we have steamed veggies for years....it's the smart way to do healthy veggies. It sounds like your mama is taking good care of your Dad.
