Usually the term &#8220;leftovers&#8221; has a terrible connotation to it, but that&#8217;s not the case today.  I&#8217;m eating Country Rigatoni.  I was served so much last night that I brought at least half of it home, and I&#8217;m happy to tell you that this is one of those dishes that&#8217;s even better the second day!<br \/>\nThank you, both for a great dinner, and even better company!<\/p>\n<p><!--more--><br \/>\nWe did the grocery shopping today.  I usually shop twice a week now because we&#8217;re eating more fresh fruits and veggies.  I had to clean out the fridge to make room for the new food, and it focuses the thought that I need to either freeze leftovers, or start cooking less food.<br \/>\nI have to throw away a container of beef stew. Granted, it was on the salty side, so probably freezing it would have been a waste, but so was storing it in the fridge.  One of DH&#8217;s favorite meals is pork chops and browned rice.  We don&#8217;t prepare it often, because we&#8217;re trying to cut back on carbs, but I needed something soft to eat last week when I had a filling replaced.  I ate mostly rice, and he ate mostly pork chops.  So&#8230;.I had a container of that waiting to be frozen or pitched.<br \/>\nDear Husband brought home a salad he had picked up for dinner on Friday night, while he was getting the Arr!! ready to come home.  That&#8217;s going to be pitched.  And, I have a serving of deli coleslaw that has to go.<br \/>\nLast week I made a 13 bean bouillabaisse with shrimp, and there were TWO containers of that taking up space in the fridge.  I would have had some of that for lunch if the Country Rigatoni hadn&#8217;t been calling to me.  So, I suppose that will get pitched, too.<br \/>\nWe simply need to cook in smaller quantities.  Or, we need to eat more left overs!  Short of that, I&#8217;ll be taking reservations&#8230;..<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Yummmmmmmmm!!!!
