This time of year we have an overabundance of zucchini.  Even one plant can provide enough zucchini for an entire neighborhood, so we&#8217;re constantly trying to find ways to use them up, or share them.<br \/>\nThis recipe for a zucchini tea bread is older than most of our children, and I make it at least once a year. I hope you enjoy it.<br \/>\nZucchini Bread<br \/>\n1 3\/4 cups all purpose flour<br \/>\n1 cup sugar<br \/>\n1 teaspoon ground cinnamon<br \/>\n1\/2 teaspoon salt<br \/>\n3\/4 teaspoon baking soda<br \/>\n1\/2 teaspoon baking powder<br \/>\n1\/2 cup salad oil<br \/>\n2 eggs, beaten<br \/>\n1 teaspoon vanilla extract<br \/>\n2 cups shredded zucchini<br \/>\n1 cup chopped walnuts<br \/>\nPreheat the oven to 350 degrees F. and grease and flour a 9 x 5 inch loaf pan.<br \/>\nIn a large bowl, combine the first nine ingredients.  Mix thoroughly.  With a spoon, add the zucchini and walnuts, and spread the batter in the pan.<br \/>\nBake 70 miunutes or until a toothpick inserted into the center comes out clean.  Cool the pan for 10 minutes on a wire rack, and then remove the loaf from the pan.  Let cool completely.  Wrap to store.<br \/>\nThis year, because we are making an effort to cut  calories and fat from our diet, I may try replacing the oil with applesauce.
