I&#8217;ve been a part of the America&#8217;s Test Kitchen family for a long time, but I&#8217;ve used the cookbooks and the Cook&#8217;s Illustrated magazine.<br \/>\nSo, my first issue arrived and I sat down to browse through it.  YUMMY recipes, a lot of comfort food, not especially oriented toward someone on a diet, but great older recipes updated. There were several recipes I wanted to make immediately!<br \/>\nNo&#8230;.I need <u>smoked<\/u> paprika for the paprika potatoes.  Hmmmm, no half-and-half for the cheese sauce for the broccoli.  Darn!  I need HOT Italian sausage for the &#8220;Quick Sunday Gravy,&#8221; Dutch-processed cocoa and milk chocolate chips for the chocolate pudding.  Ooops&#8230;that&#8217;s two ingredients. Oh nevermind, it calls for heavy cream, too.  I don&#8217;t think I have clam juice in the pantry to do the popcorn shrimp, and there are no Granny Smith apples for the apple fritters!<br \/>\nI&#8217;ve been told that if the local grocery store runs out of anything, they could call on me, but I can see that I&#8217;m falling down on my motto of &#8220;Be Prepared!&#8221;  I don&#8217;t mind having to wait on most of this, but the potatoes and fritters are really talking to me!  *G*   Maybe it&#8217;s a good thing I don&#8217;t have all the ingredients.<\/p>\n","protected":false},"excerpt":{"rendered":"<p>Why is it that when you want to try a new recipe, it seems that you are always lacking just one ingredient?
