Entertaining

In just a month, or so, we expect to have two rather large groups of people visit our home. My mother has joined the Red Hat Society, and we’ve invited them to brunch on Saturday, May 20. Once the date was established the ladies all insisted they would bring something, making it into a pot luck. They felt it would be the easiest thing to do, since one can’t have cheese, and one can’t have pasta. Who knows what other dietary restrictions may lurk in the group.
The other group that will be visiting is our friends from exercise. Rather than go out to breakfast to celebrate the May birthdays, they will all bring a dish to pass and we will celebrate here. It’s been my pleasure to have them come to us in May so that I can show off the iris. This group has dietary problems, as well, so I’ve been searching my books for something to offer.


In the past, I offered two pasta casseroles: baked ziti, and chicken and ham tetrazini. It never occurred to me that those choices might not meet the needs of my visitors. So, I’m going to make some changes. I’ll still make the baked ziti, and I’ll have Parmesan and Italian bread to go with it. But, I’m going to substitute a main dish salad for the tetrazini.
I plan to do a romaine base. I may add a little julienned carrot and red cabbage. To that I’ll add shredded chunks of chicken breast, sun-dried tomatoes, a hard-boiled egg, and green onions. For those who want to add it to their salad, I’ll shred some Parmesan cheese. I have a Lemon-Dijon dressing to make, and I’ll put out a Roasted Red Pepper Italian dressing. What do you think? Do I need to add anything else to it?
I like the sound of this salad so much that we will probably have it for dinner one night this month!

  1. Oh, that is so thoughtful of you Buffy. I’m sure that your guests will appreciate your thinking to serve them something that is healthful. You are the hostess with the mostess and I wouldn’t add a thing to your menu!
